بررسی روند رنگ‌گیری و تغییرات خواص آنتی‌اکسیدانی پنج رقم انار در طی فصل رشد

چکیده
رنگ قرمز در بیشتر ارقام تجاری انار، شاخص اصلی کیفیت محسوب می‌گردد. مطالعات زیادی نوع و مقدار آنتوسیانین‌ها را در ارقام انار بررسی نموده است، اما تغییرات رنگ‌گیری در ارقام بومی ایران کمتر مورد توجه بوده است. در این پژوهش، تغییرات رنگی و خصوصیات فیزیکوشیمیایی پوست و آریل پنج رقم انار بومی ایران (آقا محمدعلی، آلک ترش، پوست‌ سیاه، پوست‌ سفید و شیرین ساوه) در شرایط اقلیمی کرج مورد ارزیابی قرار گرفت. نتایج نشان داد، با پیشرفت فصل رشد، وزن و قطر میوه در همه ارقام افزایش یافت؛ در این میان؛ رقم پوست سفید بیشترین و رقم پوست سیاه کمترین مقادیر را داشتند. شاخص L* در آریل همه ارقام روند کاهشی، ولی در پوست آنها روند افزایشی نشان داد. شاخص a* در آریل و پوست اغلب ارقام (به‌جز رقم پوست سیاه) روند افزایشی نشان داد و در مراحل پایانی تشدید شد؛ که در نهایت نیز رقم آلک ترش بیشترین a* را داشت. زاویه هیو در اکثر ارقام روند کاهشی داشت، و رقم پوست سیاه کمترین مقدار را دارا بود. آریل‌های رقم آلک ترش بالاترین مقادیر آنتوسیانین، فنل و آنتی‌اکسیدان را دارا بودند، در حالی که پوست، رقم پوست سیاه بیشترین شدت رنگ را نشان داد. روند تغییرات فنل کل و ظرفیت آنتی‌اکسیدانی در اغلب ارقام افزایشی بود، ولی در رقم پوست سفید در انتهای آزمایش کاهش یافت. مقدار آنتوسیانین آریل در همه ارقام روند افزایشی نشان داد. بررسی ضرایب همبستگی نیز روابط معنی‌داری و مشخصی را بین شاخص‌های رنگ پوست و آریل با یکدیگر و با ترکیبات زیست‌فعال نشان داد.

Investigation of the Color Development Process and Changes in Antioxidant Properties of Five Pomegranate Cultivars During the Growing Season

Red color is considered the main quality index in most commercial pomegranates. Many studies have investigated the type and concentration of anthocyanins in pomegranate cultivars; however, changes in color development in Iranian native cultivars have received less attention. In this study, color changes and physicochemical properties of the peel and arils of five native Iranian cultivars (Agha Mohammad Ali, Alak-e Torsh, Pooste Siah, Pooste Sefid, and Shirin-e Saveh) were evaluated under the climatic conditions of Karaj. Results showed that as the growing season progressed, fruit weight and diameter increased in all cultivars; among them, Pooste Sefid exhibited the highest values, while Pooste Siah showed the lowest. The L* index of arils decreased in all cultivars, whereas it increased in the peel. The a* index of arils and peel increased in most cultivars, except Pooste Siah, and intensified in the final stages, with Alak-e Torsh ultimately exhibiting the highest a* value. The hue angle decreased in most cultivars, with Pooste Siah showing the lowest values. Arils of Alak-e Torsh contained the highest levels of anthocyanins, phenolic compounds, and antioxidant capacity, whereas the peel of Pooste Siah showed the greatest color intensity. Trends of total phenol and antioxidant capacity increased in most cultivars, but decreased in Pooste Sefid at the end of the experiment. Anthocyanin of arils increased in all cultivars during fruit development. Correlation analysis revealed significant and distinct relationships between peel and aril color indices and bioactive compounds, highlighting the association of color development with fruit quality in these cultivars.
