بررسی خواص زیستی و شیمیایی و ارزیابی روش‌‌های مختلف استخراج گلوکان از قارچ Trametes versicolor L.

چکیده
قارچ Trametes versicolor L. به دلیل خواص زیستی و شیمیایی خود، پتانسیل بالایی برای استفاده در صنایع دارویی و غذایی دارد. این مطالعه با هدف آنالیز ترکیبات تشکیل دهنده قارچ، ارزیابی خواص ضد­باکتریایی و مقایسه سه روش مختلف استخراج گلوکان (شامل استخراج با آب داغ، اسیدی و اسید-قلیایی) از قارچT. versicolor .L  انجام شد. براساس آنالیز ترکیبات تشکیل دهنده قارچ، میزان پروتئین، فیبر، خاکستر وکربوهیدرات،  به ترتیب 3/8، 05/54، 43/1، 09/30 درصد بدست آمد. همچنین میزان عناصر معدنی شامل آهن، روی و منیزیم به ترتیب 9/59، 9/25 و 300 میلی­گرم بر کیلوگرم محاسبه شد. محتوای پلی­فنلی قارچ، 230 میلی­گرم در 100 گرم و قطر هاله عدم رشد عصاره قارچ علیه Staphylococcus aureus معادل 40 میلی­متر بود. همچنین نتایج استخراج و محاسبه میزان گلوکان­های قارچ نشان داد که بالاترین محتوای گلوکان کل و آلفا گلوکان در روش آب داغ با مقادیر 35/66 و 10 درصد حاصل شد. در حالی که روش اسید-قلیا بیشترین محتوای بتاگلوکان (53/57 درصد) را نشان داد. این پژوهش نشان‌دهنده پتانسیل بالای T. versicolor L. به‌عنوان منبعی غنی از ترکیبات زیستی و عناصر معدنی برای کاربرد در صنایع غذایی و دارویی است.

The mushroom Trametes versicolor L. possesses significant biological and chemical properties, making it a promising candidate for applications in pharmaceutical and food industries. This study aimed to analyze the mushroom's composition, evaluate its antibacterial properties, and compare three different glucan extraction methods, including hot water extraction, acidic extraction, and acid-alkaline extraction. Based on compositional analysis, the protein, fiber, ash, and carbohydrate, were determined as 8.3, 54.05, 1.43, and 30.09 percent respectively. Also, the levels of mineral elements including iron, zinc, and magnesium were calculated as 59.9, 25.9, and 300 mg/kg, respectively. The phenolic content of the mushroom was measured at 230 mg/100 g, and the inhibition zone diameter of the mushroom extract against Staphylococcus aureus was 40 mm. Additionally, the extraction results showed that the hot water method yielded the highest total glucan (66.35 percent) and α-glucan (10 percent), while the acid-alkali method produced the highest β-glucan content (57.53 percent). This study highlights the high potential of T. versicolor L. as a rich source of bioactive compounds and mineral elements for use in the food and pharmaceutical industries.
