تولید بسته‌بندی هوشمند بر پایه صمغ درخت هلو و کورکومین به منظور تشخیص فساد ماهی

چکیده
هدف از این پژوهش تعیین فرمولاسیون مطلوب و ساخت بسته‌بندی زیست‌تخریب‌پذیر با ویژگی‌های فیزیکی و مکانیکی مناسب و سپس تولید یک نشانگر زیست‌تخریب‌پذیر بر پایه کورکومین به‌منظور تشخیص فساد ماهی است. به ‌منظور ساخت بسته‌بندی زیست‌تخریب‌پذیر، تأثیر غلظت‌های مختلف گلیسرول (30، 50 و 70 درصد) بر ویژگی‌های فیزیکومکانیکی فیلم، مورد ارزیابی قرار گرفت. با افزایش غلظت گلیسرول، ضخامت، جذب آب، حلالیت و کشش‌پذیری فیلم افزایش یافت؛ درحالی‌ که چگالی و مقاومت کششی ‌روند کاهشی را نشان داد (p˂0.05). نتایج آزمون میکروبی نشان داد که فیلم حاوی کورکومین دارای خاصیت ضد میکروبی قوی در برابر باکتری‌های گرم منفی و گرم مثبت است (با قطر هاله 1/6 و 8/4 میلی­متر به ترتیب در برابر باکتری استافیلوکوکوس اورئوس و اشریشیا کلی). در ادامه تحقیق، اثر تغییرات رنگ نشانگر بر روی ماهی فاسد شده با استفاده از پارامترهای رنگی مورد بررسی قرار گرفت. به ‌طور کلی مشاهده گردید که فیلم‌های هوشمند و فعال تولید شده تغییرات رنگی قابل ‌توجهی در مواجه با فساد ماهی داشتند.

چکیده English

The aims of this study were the optimization and fabrication of a biodegradable film with suitable mechanical and physical properties and also the production of a biodegradable indicator based on curcumin to detect the fish spoilage. In order to fabrication of the biodegradable packaging, the effect of different concentrations of glycerol (30, 50 and 70%) on the physicomechanical properties of films was examined. The results showed, increasing glycerol concentration led to increase of the thickness, water absorption, solubility and elongation at beak of the films, while density and tensile strength of the films showed a decreasing trend. The result of microbial test revealed that curcumin-loaded film had a good antimicrobial effect against both gram positive and gram negative bacteria. The variation of color of the films was monitored in contacting with fish during storage time. Overall, it was observed that the developed intelligent films could effectively detect the spoilage of films.
