اثر بسته بندی فعال بر مبنای فیلم‌های پلی‌اتیلنی/پروپیلنی حاوی تیمول بر ویژگی‌های کیفی و ماندگاری سالاد فصل

چکیده
سبزیجات عمر انباری پایینی دارند و از آنجا که به صورت تازه خوری مصرف می­شوند، استفاده از روش­های سالم و طبیعی برای افزایش ماندگاری آن ضروری است. پژوهش حاضر اثر بسته بندی فعال حاوی اسانس تیمول را بر روی رنگ سنجی و pH، ارزیابی میکروبی مشتمل بر شمارش کل کپک و مخمر و خواص حسی در طول شش روز ماندگاری در دمای یخچال در مدت زمان نگهداری مورد تحقیق قرار می­دهد. بدین منظور سالاد فصل با فیلم­های پلی­پروپیلن اصلاح شده و پلی­اتیلن با چگالی پایین به مدت 1، 2 و 3 روز غوطه­ وری در تیمول بسته بندی شدند. نتایج نشان داد که سالادهای فصل بسته بندی شده با فیلم­های پلی­پروپیلن اصلاح شده و پلی­اتیلن با چگالی پایین غوطه­ ور شده در اسانس تیمول برای 3 روز بیشترین pH و کمترین شمارش کپک و مخمر را نسبت به نمونه کنترل و دیگر تیمارها داشت. شمارش کپک و مخمر در نمونه­های بسته­بندی شده با پروپیلن اصلاح شده حاوی اسانس در مقایسه با پلی­اتیلن با چگالی پایین/اسانس تیمول به طور معنی­داری کمتر بود(05/0 p<). فاکتور­های L*و a*- در طول زمان نگهداری کاهش پیدا کرد. شاخص­های L*و a*- سالاد فصل در فیلم­های پلی­پروپیلن اصلاح شده و پلی­اتیلن با چگالی پایین غوطه ور شده برای 3 روز در مقایسه با نمونه شاهد و دیگر گروها کمتر بود. ارزیابی حسی نمونه­های سالاد فصل نشان داد غوطه­وری در اسانس تیمول موجب بهبود خواص حسی شده است (05/0 p<).

از آنجایی که پوشش­دهی فیلم­های پلی­پروپیلن اصلاح شده و پلی­اتیلن با چگالی پایین به ویژه فیلم پلی­پروپیلن اصلاح شده سه روز غوطه­ ور شده در تیمول موجب بهبود رنگ، کاهش تعداد کپک و مخمر و افزایش عمر ماندگاری و بهبود خواص حسی سالاد فصل شد. بنابراین فیلم­های تیمار شده با اسانس تیمول می­توانند به عنوان بسته بندی فعال عمل کنند.

Vegetables have a short shelf life, and because they are eaten fresh, it is necessary to use healthy and natural methods to increase their shelf life. The present study has investigated the effect of active packaging containing the active ingredient of thymol on the color and pH measurements, microbial evaluation, total mold and yeast count, and the sensory properties of seasonal salad during six-day storage refrigerator temperature. For this purpose, seasonal salads were packed with oriented polypropylene (OPP) and low-density polyethylene (LDPE) films immersed in thymol essential oil for 1, 2, and 3 days. Results show that season salads packed with OPP and LDPE films immersed in thymol essential oil for three days had higher pH and lower mold and yeast count than control and other treatments. The mold and yeast count were significantly lower (p < 0.05) in a sample packed with OPP films containing essential oil compared to the LDPE/ thymol essential oil. The L* and a*values decreased during storage time. The L* and -a * indices of season salads were lower in OPP and LDPE films immersed in thymol essential oil for three days than the neat and other groups. Sensory evaluation showed that immersion in thymol essential oil improved sensory attributes (p <0.05). The coated films, especially OPP, improved the color, reduced the number of mold and yeast, increased the shelf life, and improved the sensory attributes of seasonal salads. Therefore, films treated with thymol essential oil can act as active packaging.
