بهینه یابی فرمولاسیون ماست چکیده حاوی شیرخشک کم چرب، کنسانتره پروتئینی شیر و آرد سویا با استفاده از طرح آزمایشی مخلوط

چکیده
در این تحقیق اثر مقادیر مختلف شیرخشک کم چرب (5 تا 5/11 درصد)، کنسانتره پروتئینی شیر(1 تا 5 درصد) وآرد سویا (0 تا 5درصد) بر اسیدیته، pH، ویسکوزیته و ویژگی های حسی (امتیاز طعم و مزه، امتیاز رنگ و پذیرش کلی) ماست چکیده با استفاده از طرح آزمایشی مخلوط مورد بررسی قرار گرفت. نتایج بررسی اسیدیته وpH نشان داد که افزایش کنسانتره پروتئینی شیر و شیرخشک کم چرب به طور معنی دار منجر به کاهش اسیدیته و افزایش pH نمونه شدند در حالی که افزایش آرد سویا سبب افزایش اسیدیته و کاهش pH نمونه ها گردید. نتایج بررسی ویسکوزیته نمونه ها نیز نشان داد که تنها اثر خطی شیر خشک کم چرب و کنسانتره پروتئینی شیر بر روی ویسکوزیته نمونه ها معنی‌دار بودند و افزایش شیرخشک کم چرب و کنسانتره پروتئینی شیر منجر به افزایش ویسکوزیته نمونه ها شد ولی آرد سویا هیچگونه اثر معنی داری بر ویسکوزیته نمونه ها نداشت. نتایج حاصل از ارزیابی ویژگی‌های حسی اندازه گیری شده نیز حاکی از آن بود که با افزایش شیرخشک کم چرب و کنسانتره پروتئینی شیر امتیاز طعم و مزه، امتیاز رنگ و پذیرش کلی نمونه ها به طور معنی دار افزایش یافت ولی افزایش آرد سویا منجر به کاهش امتیازات ارزیابی حسی نمونه ها گردید. نتایج بررسی ضریب اهمیت در رگرسیون PLS نیز نشان داد که شیرخشک کم چرب بالاترین اهمیت مثبت و آرد سویا بالاترین اهمیت منفی را در خصوص pH، ویسکوزیته، امتیاز طعم و مزه، امتیاز رنگ و پذیرش کلی داشتند. فرمولاسیون بهینه با استفاده از قابلیت بهینه یابی عددی در نرم افزار Design Expert شامل شیرخشک کم چرب 8/9 درصد، کنسانتره پروتئینی شیر 72/1 درصد وآرد سویا 1 درصد به دست آمد.

چکیده English

In this study, the effect of different amounts of skim milk powder (SMP) (5 to 11.5%), milk protein concentrate (MPC) (1 to 5%) and soy flour (0 to 5%) on acidity, pH, viscosity and sensory characteristics (flavor, color and overall acceptance of concentrated yogurt were investigated using mixture design. The results of acidity and pH showed that increasing the MPC and SMP decreased the acidity and increased the pH of the sample significantly, while increasing soy flour increased the acidity and decreased the pH of the samples. The results of viscosity showed that only the linear effect of SMP and the MPC on the viscosity of samples was significant and increasing of SMP and MPC increased the viscosity of samples but soy flour had non-significant effect on the viscosity of the samples. The results of sensory score also showed that with increasing SMP and MPC, flavor, color and overall acceptance of samples increased significantly, but increasing soy flour decreased the sensory score. The results of variable importance in projection in PLS regression also showed that SMP had the highest positive significance and soy flour had the highest negative significance in terms of pH, viscosity, flavor score, color score and overall acceptance. The optimum formulation was obtained using numerical optimization algorithm in

in Design Expert software were SMP 9.8%, MPC 1.72% and soy flour 1%.
