بررسی تاثیر استفاده از پودر تفاله انگور برای تولید مغزی‌های مربایی فراسودمند دارای باسیلوس کواگولانس بر ویژگی‌های فیزیکوشیمیایی و حسی شیرینی آردی

چکیده
با توجه به افزایش تقاضا برای محصولات غذایی فراسودمند و اهمیت بهبود ویژگی‌های حسی و سلامت‌محور شیرینی‌ها، در این پژوهش تولید مغزی مربایی فراسودمند با استفاده از تفاله­ انگور جایگزین پکتین و شیره انگور برای شیرین­کننده­ طبیعی که دارای باکتری­ پروبیوتیک باسیلوس کواگولانس بود، بررسی شد. مقادیر مختلف تفاله انگور (5/2، 0/5، 5/7 و 10 گرم) جایگزین پکتین شد. از شیره انگور به­عنوان شیرین کننده طبیعی و برای فراسودمند کردن مغزی از دو سویه باکتری پروبیوتیک باسیلوس کواگولانس استفاده شد. مغزی تولید شده در فرمولاسیون شیرینی آردی استفاده شد و سپس در شرایط شبیه سازی دستگاه گوارش (معده و رود) قرار گرفت. درصد بقای هر دو سویه­ موجود در مغزی­های مربایی در شرایط برون­تنی دستگاه گوارش بالاتر از 90 درصد بود که نشان داد مغزی مربایی می‌تواند یک ماده غذایی مهم نه تنها برای حمل گونه‌های باسیلوس در طول عمر مفیدشان باشد، بلکه می‌تواند به­طور بالقوه بقای آن‌ها را در شرایط دستگاه گوارش تضمین کند. پذیرش کلی در مغزی­های حاوی شیره انگور و باسیلوس کواگولانس (53/4) از مغزی­های معمولی (29/4) بیشتر بود. نتایج این پژوهش نشان داد که می­توان با استفاده از تفاله انگور، شیره انگور و باکتری پروبیوتیک باسیلوس کواگولانس، مغزی­ مربایی پروبیوتیک با قند طبیعی تولید کرد که منجر به ارزش­دهی فرآورده­های جانبی صنایع غذایی نیز می­شود.

چکیده English

Given the increasing demand for functional food products and the importance of enhancing sensory and health-related properties of pastries, in this research, the production of functional fruit filling was investigated using grape pomace as a substitute for pectin and grape syrup as a natural sweetener that contained Bacillus Coagulans probiotic bacteria. Different amounts of grape pomace (2.5, 0.5, 7.5, and 10 g) were replaced by pectin. The grape syrup was used as a natural sweetener and 2 strains of B. Coagulans probiotic bacteria were used to functional the filling. The filling produced in the pastry formulation was used and then subjected to simulated gastrointestinal conditions (stomach and small intestine). The survival percentage of both strains present in the fruit filling in the in vitro conditions of the digestive system was higher than 90 %, which showed that filling can be an important food not only for carrying Bacillus species throughout their useful life but also for potentially guaranteeing their survival in the conditions of the digestive system. The results of the sensory evaluation showed that the overall acceptance of fillings containing grape syrup and B. Coagulans (4.53) was higher than normal filling (4.29). The results of this research showed that it is possible to produce probiotic filling with natural sugar by using grape pomace, grape syrup, and B. Coagulans probiotic bacteria, which leads to the value of the by-products of the food industry.
