امکان سنجی کاربرد سنجد در تولید میان وعده اکسترود شده و ارزیابی ویژگی های فراورده

چکیده
میان وعده ها بخشی از عادت غذایی جمعیت جهان می باشند. مصرف بالا و افزایش تنوع میان وعده های اکسترود در سال های اخیر مبین ضرورت توجه در باب افزایش کیفیت تغذیه ای آن ها در کنار پذیرش از سوی بازار مصرف می باشد. در این تحقیق، برپایه طرح مرکب مرکزی چرخش پذیر تاثیرمتغیرهای مستقل فرایند شامل پودر سنجد کامل (15-5 درصد)، میزان رطوبت (20-12 درصد) و سرعت چرخش ماردون اکسترودر (180-120 دور در دقیقه) بر ویژگی های فیزیکوشیمیایی، بافتی و رنگ فراورده حجیم شده بر پایه ذرت-گندم بررسی گردید. نتایج نشان داد تاثیر افزودن آرد سنجد به صورت مستقل موجب افزایش دانسیته، سختی و حلالیت گردید؛ با این حال افزایش پارامتر سرعت چرخش هلیس سبب بهبود خصوصیات فراورده شد. بطوریکه اثر همزمان افزایش سرعت چرخش و آرد سنجد دانسیته فراورده را کاهش داد. در حداقل میزان رطوبت افزایش سنجد تاثیری بر فاکتور سختی نداشت اما به تدریج با افزایش هردو پارامتر، سختی نمونه ها به طرز معنی داری افزایش یافت. افزایش میزان رطوبت و سرعت چرخش تاثیر بسزایی در روشن تر شدن رنگ نمونه ها داشت؛ اما افزایش سنجد روشنی را کاهش داد. شرایط بهینه تولید محصول اکسترود شده، شامل میزان رطوبت خوراک 87/13 درصد، میزان آرد سنجد 5 درصد و سرعت چرخش ماردون 7/166 دور بر دقیقه تعیین گردید.

چکیده English

Snack foods contain main parts of food habit among people in the world. Recently the high rate of consumption and variety of extruded snacks is proven to increase the attention to nutritional quality besides keeping desired acceptability of products. In this study, based on central composite design the effect of independent variables consist of the whole Oleaster powder (5- 15%), moisture content (12-20%), screw speed (120-180 RPM), were investigated on the physicochemical, textural and color of extrudates based on corn- wheat grit. results showed that, Increasing Oleaster content caused an increase in the density, hardness and solubility. Whereas, Increase screw rate and oleaster content simultaneously leaded to a lower density. In low amount of moisture content, improvement of oleaster content didn’t significant effect on hardness. However by boosting recent factors gradually, the hardness of products increased dramatically. Moisture content and screw speed had absolute effect on lightness of extrudates. Meanwhile improvement of oleaster content caused a decrease in lightness. Optimum condition was determined to be the feed moisture content (13.87%), oleaster content (5%) and screw speed rate (166.7 rpm).
