اندازه‌گیری کمی رنگ‌های مصنوعی مجاز خوراکی در موادغذایی: افزایش سلامت و ایمنی غذا

چکیده
رنگ­ها از جمله افزودنی­های غذایی هستند که که به طور مستقیم بر سلامت و ایمنی غذا تاثیر گذار می­باشند. با توجه به افزایش روز افزون استفاده از رنگ­های مصنوعی در صنایع غذایی، از طرفی زیانبار بودن مصرف بیش از حد این ترکیبات، به منظور افزایش سلامت و ایمنی غذایی در سطح جامعه، در این تحقیق سعی شده است که با استفاده از ساده­ ترین تجهیزات آزمایشگاهی، روشی معتبر جهت اندازه­ گیری کمی رنگ­ های مصنوعی در موادغذایی ارائه شود. نمونه فرآورده یخی به علت بافت ساده­ ای که دارد، به عنوان نمونه حقیقی انتخاب شد. در این مطالعه سعی شد که کلیه رنگ ­های مصنوعی مجاز برای استفاده در موادغذایی شامل رنگ­ های زرد ، رنگ­ های قرمز ، رنگ­ های آبی و مخلوط کلیه این رنگ­ ها به طور همزمان و به صورت قرمز - زرد، قرمز آبی و آبی زرد، طی یک تزریق در نمونه فرآورده یخی شناسایی و به صورت کمی اندازه ­گیری شود. کلیه پارامترهای اعتباربخشی روش معرفی شده، برای هریک از رنگ ­ها محاسبه و با استانداردهای بین­ المللی مربوطه مورد مقایسه قرار گرفت. نتایج حاصل از پارامترهای اعتباربخشی، دارای تطابق بسیار خوبی با مقادیر استاندارد بین­ المللی هستند که تایید کننده قابلیت روش به عنوان یک روش معتبر آزمایشگاهی نه تنها برای تشخیص کیفی بلکه اندازه ­گیری کمی رنگ­ های مصنوعی مجاز در موادغذایی است.

چکیده English

Synthetic colors are additives which can affect the health and safety of food directly. As a result of the increase of synthetic dyes usage in industry and harmful effects of excessive consumption of synthetic colors on human health, we have attempted to propose a valid method by the simplest laboratory equipment for control dose of synthetic colors in foods. In this study, we have selected ice products as the real sample because of its simple matrix. Here, we have attempted to the determination of all allowed synthetic colors in ice samples as individual and mixtures of them (yellow-red, yellow-blue and red-blue) in one run simultaneously. All validation parameters of the method were calculated for each color and compared with international standards. Obtained results are in accordance with international standards and confirm that this method has a good potential to apply as a valid laboratory method not only for qualitative but also the measurement of synthetic colors in food.
