بررسی تغییرات فیتوشیمیایی و آنتی‌اکسیدانی دو رقم میوه توت‌فرنگی در طی 15 روز نگه‌داری در دمای 4 درجه سانتی‌گراد

چکیده
توت­ فرنگی (Fragaria×ananassa) گیاهی متعلق به خانواده گل­­سرخیان، یکی از مهمترین ریز میوهها است که به ­دلیل عطر و طعم شیرین از محبوب­ترین و پر­مصرف­ترین توت­ ها در سراسر جهان می­باشد. در این مطالعه تغییرات صفات کیفی و فیتوشیمیایی دو رقم توت­فرنگی کاماروزا و پاروسدر طی پانزدهروز نگهداری در دمای 4 درجه سانتی­گراد مورد بررسی قرار گرفت. به­ همین­ منظور تعیین آلودگی­های احتمالی میوه توت­ فرنگی به آلاینده­ ها، میزان فلزات سنگین با استفاده از تکنیک طیف سنجی نشری توسط دستگاه ICP بررسی شد. نتایج مقایسه صفات مورد بررسی در دو رقم توت ­فرنگی نشان داد میزان فنل، فلاونوئید، فلاونول، آنتوسیانین و کربوهیدرات در رقم کاماروزا به طرز معنی­داری بیشتر از رقم پاروس بود. اما به­ لحاظ بررسی میزان فیبر، رقم پاروس محتوای فیبر بیشتری داشت. براساس نتایج مقایسه دادههای دو رقم توتفرنگی بعد از پانزده روز نگه­داری، میزان فنل، فلاونوئید، فلاونول، کربوهیدرات و ظرفیت آنتی­ اکسیدانی فقط در رقم کاماروزا به طرز معنی­ داری افزایش نشان داد. این بررسی­ ها نشان می­دهد به­ لحاظ ارزش غذایی و نیز حفظ ترکیبات طبیعی در طی نگه­داری و شرایط پس از برداشت نوع رقم توت­فرنگی عامل تعیینکنندهای می­باشد به­ طوری که کاماروزا برتری ویژه­ای نسبت به رقم پاروس دارد. بررسی نتایج فلزات سنگین در دو رقم میوه توت ­فرنگی نشان داد بهجز مقدار فلز روی که در هر دو گونه توت­ فرنگی، کمتر ازحد مجاز پذیرفتهشده توسط سازمان بهداشت جهانی می­باشد، مقدار سایر فلزات سنگین مورد مطالعه بالاتر ازحد استاندارد بود. بنابراین با توجه به پیامد­های زیان­بار فلزات سنگین و توانایی توت­فرنگی در تجمع فلزات سنگین در بافت میوه، اهتمام ویژه به مدیریت کاشت، آبیاری و ارزیابی زیستمحیطی مزارع توت­ فرنگی جهت جلوگیری از بیماری­ها و مسمومیت­های ناشی از مصرف میوههای آلوده، اهمیت فوقالعادهای دارد.

Strawberry (Fragaria × ananassa) is a plant belonging to the rose family, one of the most important small fruits, which is one of the most popular and widely used berries in the world due to its sweet aroma and taste. In this study, changes in qualitative and phytochemical traits of Kamaroza and Parus strawberry cultivars during 15 days of storage at 4 °C were investigated. In order to determine the possible contamination of strawberry fruit with contaminants, the amount of heavy metals was investigated using the emission spectroscopy technique by ICP. The results of comparing the studied traits in two strawberry cultivars showed that the amount of phenol, flavonoids, flavonols, anthocyanins and carbohydrates in Camarosa cultivar was significantly higher than Parus cultivar. But in terms of fiber content, Parus cultivar had more fiber content. Based on the results of comparing the data of two strawberry cultivars, after 15 days of storage, the amount of phenol, flavonoids, flavonols, carbohydrates and antioxidant capacity showed a significant increase only in Camarosa cultivar. These studies show that in terms of nutritional value and preservation of natural compounds during storage and post-harvest conditions, the type of strawberry cultivar is a determining factor, so that Camarosa has a special advantage over Parus cultivar. Examination of heavy metal results in two strawberry fruit cultivars showed that except for the amount of zinc metal, which in both strawberry species is less than the limit accepted by the World Health Organization, the amount of other heavy metals studied was higher than the standard.
