اثر آویشن‌شیرازی (Zataria multiflora Boiss) پرتو دیده با دز متوسط اشعه گاما بر ماندگاری فیله ماهی قزل‌آلا رنگین کمان (Oncorhynchus mykiss) حاوی پوشش فعال بر پایه کازئینات سدیم

چکیده
به­منظور بررسی تأثیر پرتودهی با دز متوسط اشعه گاما (دز 10 کیلوگری) بر خصوصیات ضد­اکسیدانی و ضدباکتریایی آویشن شیرازی، پوشش خوراکی فعال حاوی عصاره آویشن شیرازی (5/1 %) معمولی و پرتودیده بر پایه کازئینات سدیم (8 %) تهیه و ماندگاری فیله ماهی قزل­آلای رنگین کمان پوشش داده شده در آزمایشی با 4 تیمار فیله­های فاقد پوشش (شاهد:C )، فیله­های حاوی پوشش کازئینات سدیم (تیمار1: T1) و فیله­های دارای پوشش حاوی عصاره آویشن شیرازی معمولی (تیمار2: T2) و پرتودیده (تیمار3: T3) بر پایه کازئینات سدیم و 4 تکرار، طی دوره نگهداری 10 روزه در دمای 4 درجه سانتی­گراد بررسی شد. آزمایشات شیمیایی (TVN, TBA, PV) و میکروبی (هوازی مزوفیل و سرماگرا) در روزهای صفر، 3، 6 و 10 اندازه­گیری شد. نتایج نشان داد؛ پرتودهی آویشن شیرازی با دز متوسط اشعه گاما، با وجود اثرات مثبت، موجب تغییرات معنی­دار بر خواص ضد­اکسیدانی و ضد­باکتریایی آن نشد. اما در انتهای دوره نگهداری، کمترین مقادیر TBA (mg MDA/Kg 23/0±23/3)، TVN (mg/100g 12/1±23/25) و باکتری­های سرماگرا (log cfu/g 13/0±00/5) در فیله­های حاوی پوشش فعال کازئینات سدیم و عصاره پرتودیده آویشن شیرازی دیده شد (p<0.05). بنابراین می­توان از عصاره آویشن شیرازی به صورت معمولی یا پرتودیده در پوشش فعال کازئینات سدیم، جهت افزایش ماندگاری و کیفیت فیله ماهی قزل­آلای رنگین کمان در دمای یخچال حداقل به مدت 10 روز استفاده کرد.

Effect of Zataria multiflora Boiss irradiated with moderate dose of gamma rays on the shelf life of rainbow trout fillet (Oncorhynchus mykiss) containing active coating based on sodium caseinate

چکیده English

In order to evaluate the effect of moderate dose gamma irradiation (10 KGr) on ​​antioxidant and antibacterial properties of Zataria multiflora Boiss, edible active coating containing normal and irradiated extract (1.5%) on base of Na-caseinate solution (8%) was prepared and shelf life of coated rainbow trout fillet was evaluted. An experiment was carry out with 4 treatments without coating (control), fillets coated with Na-caseinate (T1), and fillets coated with Na-caseinate enriched with normal (T2) or irradiated (T3) Zataria multiflora Boiss extract and 4 replicates during 10 days at refrigerated (4±1oC) storage. Chemical (TVN, TBA, PV) and microbial (TVC and PTC) tests were measured on days 0, 3, 6 and 10. The results showed irradiation of Zataria multiflora Boiss with a moderate dose of gamma rays, despite the possitive effects, did not cause significant changes in its antioxidant and antibacterial properties. But at the end of the storage period, the lowest levels of TBA (3.23±0.23 mg MDA/Kg), TVN (25.23±1.12 mg/100g) and psychrophilic bacteria counts (5.00±0.13 log cfu/g) was found in fillets containing active coating of Na-caseinate and irradiated Zataria multiflora Boiss extract (p <0.05). Therefore, Zataria multiflora Boiss extract can be used as normal or irradiated in the active coating of Na-caseinate, to increase the shelf life and quality of rainbow trout fillets at refrigerator temperature for at least 10 days.
