بررسی روشهای آنالیز باقیمانده ی آفت کش ها، مایکوتوکسین ها، آنتی اکسیدانها و فلزات سنگین در روغن های خوراکی

چکیده
با توجه به استفاده­ ی گسترده از روغن­ها در تهیه غذاها، کنترل مقدار انواع ترکیبات موجود در روغن­های خوراکی که می­توانند برای سلامتی انسان مشکل­ ساز باشند از اهمیت فوق­العاده ­ای برخوردار است. با توجه به ماتریکس پیچیده روغن­ها، آنالیز انواع ترکیبات موجود در آنها معمولا بدون جداسازی و حذف اثرات ماتریکس امکان­پذیر نمی­باشد. در این راستا، انواع روشهای استخراج و جداسازی توسط پژوهشگران ارائه شده است. لذا در این مقاله سـعی شـده اسـت مهمترین روشهای استخراج به کار گرفته شده در آنالیز روغن­های خوراکی به صورت جـامع معرفـی شده و به جزئیات روش اجرا و کاربرد آنها در آنالیز روغنها پرداخته شود.

چکیده English

Considering the widespread use of oils in the preparation of foods, controlling the amount of ingredients in edible oils that can be problematic for human health is extremely important. Due to the complex matrix of oils, analysis of the different compounds in them is usually not possible without isolating and removing the matrix effects. In this regard, a variety of extraction and isolation methods are presented by researchers. Therefore, in this paper it has been tried to introduce in detail the most important extraction methods used in the analysis of edible oils and how they are applied.
