		<Abstract>Reduction of wheat consumption utilization in bread and wheat flour products is one of the main ways to reduce the costs and get more economical processes. So the aim of this study was evaluation of sanginak (latirus sativus) flour (in four levels of  0, 10, 20 and 30%) and guar gum (in three levels of  0, 0.25 and 0.5%) on moisture content, special volume, texture and sensory  properties of semi bulked Barbari bread. The results showed by adding sanginak flour moisture content and firmness was increased and specific volume were decreased. However the panelists gave the highest score to the control samples. contain 10 and 20% sanginak flour. On the other hand the moisture content, specific volume, porosity and overall acceptability were increased and firmness was decreased by increasing the amount of guar gum. The final results of this project showed the sample contains 20% sanginak flour and 0.5% gaur gum In terms of specific volume, rheological and sensory properties was Competitive with that of the control sample (100% wheat flour).</Abstract>
			<OtherAbstract Language="FA">چکیده جایگزینی بخشی از گندم در تولید نان با سایر محصولات کشاورزی یکی از راهکارهای اصلی در تعدیل مصرف گندم و کمک به اقتصاد ملی می‏باشد. هدف از انجام این پژوهش  بررسی امکان جایگزینی بخشی از آرد گندم با آرد سنگینک در سه سطح10، 20 و 30 درصد و اثر صمغ گوار در دو سطح  25/0 و 5/0 درصد و تاثیر آن بر میزان رطوبت، حجم مخصوص، بافت و خصوصیات حسی نان بربری نیمه حجیم بود.. نتایج نشان داد که با افزایش میزان آرد سنگینک رطوبت و سفتی نان افزایش و حجم مخصوص نمونه ها کاهش یافت. در ارزیابی حسی نمونه شاهد در مقایسه با نمونه های  حاوی آرد سنگینک امتیاز بالاتری را کسب نمود. افزودن صمغ گوار ب نان سبب افزایش رطوبت، حجم مخصوص و پذیرش کلی و کاهش میزان سفتی در نمونه ها بود. جایگزینی تا 20 درصد آرد سنگینک با آرد گندم درصورت استفاده از 5/0 درصد صمغ گوار از نظر خواص رئولوژی، حجم مخصوص و خواص حسی قابل رقابت با نمونه شاهد (100 درصد گندم) بود.</OtherAbstract>
