ارزیابی فاکتورهای موثر بر خواص مکانیکی، کدورت و نفوذ پذیری نسبت به بخار آب فیلم های خوراکی بر پایه صمغ تراگاکانت با استفاده از روش پاسخ سطح
Evaluation of factors affecting barrier, mechanical and optical properties of tragacanth gum-based edible films using Response surface methodology
چکیده
فرمولاسیون امولسیون پوشش/فیلم های خوراکی با استفاده از صمغ کتیرا (تراگاکانت) بعنوان ماده اصلی تشکیل دهنده فیلم صورت گرفت. برخی آزمایشات برای تعیین غلظت صمغ کتیرا (تراگاکانت)، لیپید و ماده نرم کننده در فیلم انجام شد و اثرات غلظت های مختلف صمغ کتیرا (0.65، 1، 1.5، 2، 2.35 گرم کتیرا/ گرم آب مقطر)، روغن کانولا (23، 30، 40، 50، 58 درصد وزن خشک صمغ کتیرا) و گلیسرول (33، 40، 50، 60، 67 درصد وزن خشک صمغ کتیرا) بر قابلیت نفوذ پذیری نسبت به بخار آب ،ویژگی های مکانیکی وکدورت فیلم ها با استفاده از روش سطح پاسخ ارزیابی شد. قابلیت نفوذ پذیری نسبت به بخار آب در محدوده g m<sup>-1</sup> s<sup>-1</sup> Pa<sup>-1</sup> <sup>11-</sup>10 ×(36-05/2) مشاهده شد و با افزایش غلظت گلیسرول و صمغ افزایش و با افزایش غلظت روغن کاهش یافت. تحت تاثیر ترکیبات فیلم محدوده وسیعی از مقدار مقاومت کششی(15/7 -65/ مگا پاسکال) و درصد افزایش طول در نقطه پاره شدن (%8/7- 99/1) مشاهده شد. افزایش محتوی صمغ تراگاکانت وکاهش غلظت گلیسرول باعث افزایش مقاومت کششی شد در حالیکه افزایش طول در نقطه پاره شدن با افزایش غلظت صمغ تراگاکانت و گلیسرول افزایش داشت و با افزایش غلظت روغن کاهش داشت. روغن مهمترین فاکتور موثر بر کدورت بود و با افزایش غلظت روغن کدورت افزایش یافت. مدل های موجود برای نفوذ پذیری بخار آب، مقاومت کششی، درصد افزایش طول، و کدورت دارای مقدار R<sup>2</sup> بالا به ترتیب (983/0-952/0-824/0 و94/0) بود.
Emulsion coatings were formulated and films were developed using tragacanth gum as the basic structural component. Preliminary experiments were carried out to determine the proper concentration of tragacanth gum, lipid and plasticizers in the film. The effects of different concentrations of tragacanth gum (0.65, 1, 1.5, 2, 2.35 g /g distilled water), canola oil (23, 30, 40, 50, 58 g/g tragacanth dry wt basis) and glycerol (33, 40, 50, 60, 67 g/g tragacanth dry wt basis) on water vapor permeability (WVP), mechanical properties and opacity (OP) of the films were evaluated using the response surface methodology. WVP was observed in the range of (2.05-36) x 10<sup>-11</sup> and increased by tragacanth and glycerol concentration and was decreased by oil concentration. Tensile strength and elongation at break ranged between 0.67-7.15 Mpa and 1.99 – 7.8%; respectively. Increasing the amount of tragacanth gum and decreasing the glycerol and oil concentration increased tensile strength (TS) while elongation at break (EB) increased by increasing both tragacanth and glycerol concentration and decreased by increasing oil concentration. Oil was the most influential factor that affected opacity, which increased with increasing oil concentration. Models developed for WVP, EB, TS and OP had high coefficient of multiple determination (R<sup>2</sup>) values (0.983, 0.952, 0.824, 0.94) respectively.
