ارزیابی کیفیت باکتریولوژیکی ماهیان شور تهیه شده به روش سنتی در شمال ایران
Bacteriological quality evaluation of salted fishes that are produced traditionally in the North of Iran
چکیده
در دهه اخیر مصرف انواع مختلف ماهی در ایران رو به افزایش بوده است. در شمال ایران ماهی شور مصرف زیادی دارد. این فرآورده به روش سنتی تهیه شده و بصورت نیم پخته مصرف می گردد. بنابراین در صورت بالا بودن بارمیکروبی و آلودگی به باکتریهای بیماریزا امکان بروز عفونت یا مسمویت غذایی در اثر مصرف این فرآورده وجود دارد. هدف از انجام این مطالعه بررسی کیفیت باکتریولوژیکی ماهیان شور تهیه شده به روش سنتی در یکی از استانهای شمالی ایران ( گیلان ) بوده است.
تعداد 72 نمونه ماهی از دو گونه کفال طلایی (Mugil auratus) و ماهی سفید (Rutilus frisi kutum) بلافاصله پس از مرحله شور کردن به روش سنتی ، جمع آوری و طبق روش استاندارد APHA از نظر شمارش کلی باکتریهای هوازی ، شمارش کلی فرم ، و آلودگی به اشرشیا کلی و ویبربوپاراهمولیتیکوس مورد آزمایش باکتریولوژیکی قرار گرفتند.
تعداد کل باکتریهای هوازی بین <sup>cfu</sup>/g 10<sup>3</sup>× 1 تا <sup>cfu</sup>/g 10<sup>5</sup>× 5 متغیر بود و میانگین آن در گونه <sup>cfu</sup>/g <em>Mugil auratus</em> 10<sup>3</sup>×2/3 و در گونه <sup>cfu</sup>/g <em>Rutilus frisi kutum</em><em> </em>10<sup>5</sup>×4/5 تعیین گردید در 1/11 درصد از نمونه ها آلودگی به کلی فرم با میانگین <sup>cfu</sup>/g 102×2 مورد تایید قرارگرفت اما آلودگی به اشرشیا کلی ثابت نگردید. همچنین در 57 نمونه ( 16/ 79% ) آلودگی به ویبریو پاراهمولیتیکوس تایید گردید بدین صورت که آلودگی در 26 نمونه (45.6 %) از نمونه ماهیان <em>Mugil auratu</em>s و 31 نمونه ( 54.3% ) از ماهیان<em>Rutilus frisi kutum </em><em> </em> مشاهده گردید.
نتایج مطالعات انجام شده در سایر کشورهای جهان و این مطالعه نشاندهنده آن است که امکان آلودگی فرآورده های دریایی تهیه شده به روش سنتی ( بویژه ماهی شور و دودی ) به باکتریهای بیماریزا وجود دارد لذا آموزش بهداشت ، اصلاح روش عمل آوری این محصولات ، عدم مصرف آنها بصورت خام یا نیم پز، و کنترل و نظارت منظم مسئولین بهداشتی می توانند در پیشگیری از بروز عفونتها و مسمویتهای غذایی ناشی از مصرف این محصولات موثر واقع گردند.
The consumption of different kinds of fish has been increasing in Iran, during the recent decade. Therefore, high microbial content and contamination of such food with pathogen bacteria can cause infection or food poisoning. The objective of this study is investigation of salted fish bacteriologic quality that is produced traditionally in one of the North states of Iran (Guilan).
72 fish samples from two species of <em>Rutilus frisi kutum </em>and <em>Mugil auratus</em> were collected, immediately after traditionally salting and their total count of aerobic and coli form bacteria and contamination to E.coli and <span style="text-decoration: underline;">vibrio parahaemoliticus</span> were investigated due to standard APHA method.
The total number of aerobic bacteria differs from 5×10<sup>5 </sup>to 1×10<sup>3</sup> cfu/g and the mean numbers were 3.2×10<sup>3</sup> cfu/g for <em>Mugil auratus</em> and 5.4×10<sup>5</sup> cfu/gfor <em>Rutilus frisi kutum</em> . 11.1 percent of the samples were contaminated with coliform bacteria with mean number of 2×10<sup>2 </sup>cfu/g but no contamination with E.coli was confirmed. Moreover, in 57 samples (79.16%) contamination with vibrio parahaemoliticus was observed that were comprised 26 samples (45.6%) of <em>Mugil auratus</em> fish and 31 samples (54.3%) of <em>Rutilus frisi kutum</em> <em>.</em>
In conclusion, the results of this study and the similar ones in other countries demonstrated that there is the possibility of seafood products poisoning with pathogen bacteria. Therefore, health training, improvement of processing, avoiding raw consumption and finally, regular controlling of health care managers can be effective in prevention of infectious diseases and food poisoning following consumption of these products.
